Brush grill pan or other oven proof pan with neutral oil. Preheat oven to 500 degrees with pan in oven for 10 - 20 minutes.

Meanwhile, rinse steaks and pat dry well. Sprinkle with lots of freshly ground pepper and kosher salt. Larger salt crystals are better, since smaller ones may fall off onto the grill pan.

When pan has preheated - it should be very hot - place steaks carefully on the pan, leaving it in the oven. Turn after 3-5 minutes, depending on thickness and desired internal temperature. After 3-5 minutes on that side remove and let rest for at least 5 minutes.
