There are many ways to cook great steaks and proper technique can make a big difference. If you have a grill pan, try this method next time. It works best with a cast iron grill pan, but would also work with any kind of cast iron pan or even a just an oven-proof skillet.
Preheat your oven to 500 degrees with the pan in the oven and leave it in there for 10 – 20 minutes, lightly oiled, until the pan gets very hot. Use a neutral oil so it doesn’t smoke too much. When you place the steaks in, they will sear on the bottom and cook through at the same time. Turn once to sear the other side. Only 3-5 minutes per side will be medium rare, depending on the thickness of the steak.
Grilled Steaks in the Oven
1 lb of filet mignon, rib eye, or other thick steak
salt and pepper
neutral oil like canola oil
1. Brush grill pan or other oven proof pan with neutral oil. Preheat oven to 500 degrees with pan in oven for 10 – 20 minutes.
2. Meanwhile, rinse steaks and pat dry well. Sprinkle with lots of freshly ground pepper and kosher salt. Larger salt crystals are better, since smaller ones may fall off onto the grill pan.
3. When pan has preheated – it should be very hot – place steaks carefully on the pan, leaving it in the oven. Turn after 3-5 minutes, depending on thickness and desired internal temperature. After 3-5 minutes on that side remove and let rest for at least 5 minutes.
